Why I Love This Recipe
I've had this at Diner before, but put my twist on it. It's a yummy hearty, creative way to use leftover steak and potatoes, and is a great meal for girlfriends, hungry kids, and families.
So Simple.... but there's something magical that happens when warm potatoes and steak are teamed with cold salad....
Ingredients You'll Need
Exact quantity of meat based on what you have to work with:
Leftover steak
Salad Dressing -- 1/4 cup of Olive oil and 3 tablespoons of red wine vinegar, juice of one half lemon, 1 tablespoon of good grainy mustard, or Dijon, 1 tsp. oregano, 1 tsp. salt and 1/4 tsp. pepper (you can use any salad dressing you like, but I love this combination for this recipe)
1 cup of Boiled quartered potatoes (leftover or made fresh)
1/4 Red onion sliced thin
Romaine lettuce chopped
Green beans (if you have - or canned French style string beans drained)
Directions
Slice steak into thin strips
Marinate the potatoes and onions (and green beans) in the Dressing and warm in a microwave for 30 seconds covered. Mix well.
Add the steak (to help warm it) to the marinade.
Chop and wash romaine lettuce for a bed beneath the steak salad.
Place steak on top of salad and toss together to help the dressing work into the meat.
Serve with a crusty loaf of bread!
If you like, you can add 2 halved hardboiled eggs to this and place on top of tossed salad - kind of a twist on a Nicoise salad.
