Ingredients You'll Need
1 (15 oz.) can dark red kidney beans (rinsed & drained)
1 (15 oz.) can light red kidney beans OR garbanzo beans (rinsed & drained)
1 (15oz.) can cannellini beans OR navy beans (rinsed & drained)
5 stalks celery diced
1 small red onion diced
1 bell pepper (any color) steamed, seeded & chopped
½ C fresh parsley
Dressing Ingredients:
2 Tbsp. Extra Virgin Olive Oil (EVOO)
Juice of 1 lemon
Salt & pepper to taste
Directions
Combine all ingredients and chill for at least 2 hours before serving
