# 2 teaspoons olive oil
# 1 medium yellow onion, finely chopped
# 1 garlic clove, minced
# 1 10-ounce package frozen chopped spinach,
thawed and drained
# 1/2 roasted red peppers, drained and chopped
# 1 1/2 cups grated Light Cheddar cheese
# 1/2 cup low fat parmesan cheese
# 6 large egg whites
# 2 large egg
# 1/3 cup low fat Cottage Cheese
# 1/4 teaspoon crushed red pepper flakes
# 1/8 teaspoon salt
# 1/8 teaspoon pepper
# 1/2 cup Whey Crisps


Directions

Drizzle oil in nonstick skillet over medium-high heat. Add onion and garlic; saut? for 5 minutes. Add spinach and stir for 3 additional minutes, or until spinach is dry add roasted red pepper. Set aside. Preheat oven to 350°. Lightly coat 9" nonstick pie pan with cooking spray. Sprinkle cheese and Whey Crisps on bottom of pan. Top with spinach mixture. In a medium bowl, whisk egg whites, egg, cottage cheese, seasoning. Pour egg mixture over spinach. Bake for 30 minutes or until set. Let sit 5 minutes. Cut and serve warm.
