White Bean/ Artichoke/ Olive Bruschetta

Ingredients You'll Need
fresh baguettes
artichokes
chile flakes
swiss or goat cheese
olive oil
white beans
rosemary
olives
hot sauce
ricotta
Directions
Select fresh baguettes from your local bakery. Slice on an angle 1/4" thick slices, set on a cookie sheet. Drizzle with olive oil. Bake in oven at 400 degrees for 8-10 minutes.
I take canned artichokes, drain and rinse, add 1/4 tsp. chile flakes, and 2-3" pieces of swiss, or goat cheese, depending on your tastes, pulse in food processor. If too chunky, add a bit of olive oil.
another option: Canned white beans, drain and rinse, add 1/2 to 1 sprig fresh rosemary, add to food processor and pulse. Add some olive oil, pinch salt and/or parmesan, pulse until almost creamy.
another option: canned olives, 1/2 green and 1 black, add 1 small can of pimentos if desired, put in food processor, add olive oil, and a couple of drops of your favorite hot sauce. You can add a bit of ricotta to make a creamy olive spread.
