Why I Love This Recipe

This recipe is my own creation. I wanted something I could feel good about eating for breakfast - a recipe for banana bread that was more like real food than like dessert. It's delicious: moist, soft, interior with a nice crust.

Ingredients You'll Need

1 1/4 cups whole wheat flour
1/2 cup all-purpose flour or whole wheat pastry flour
1/2 tsp salt
1/2 tsp baking soda
3/4 tsp baking powder
3 bananas, mashed
juice from half a lemon
1/4 cup butter
1/4 cup vegetable oil
3/4 cup brown sugar (slightly more or less to taste)
1/4 cup applesauce
1 tablespoon bourbon
1/4 tsp vanilla
1 egg
3/4 cup pecans or walnuts
raw cane sugar (the large crystals)


Preheat oven to 375F. In a medium bowl, stir together first five ingredients. In a small bowl, mash bananas (I use a fork) and stir in lemon juice. In a mixing bowl, cream together butter, oil, and sugar. Mix very well, until lightened in color and fluffy-looking. Add egg, applesauce, bourbon, and vanilla, and mix thoroughly. Add half of the dry ingredients, mix, add the bananas, mix, add the remaining dry ingredients. My until just moistened, then spread into a greased or parchment-lined loaf pan. Sprinkle raw sugar on top. Bake for 50-60 minutes, until top is browned and a knife inserted in the center comes out clean
