Whole Wheat Pancakes

Why I Love This Recipe
My sister-in-law made these pancakes for me many years ago. It was the first time I'd had whole wheat pancakes. They are much heavier than pancakes you may be used to, but I love the texture and the nutty whole wheat flavor. They are especially good with fresh fruit, or peaches that we've put up in the freezer.

Ingredients You'll Need
2 ½ c. whole wheat flour (if you prefer, mix equal amounts of regular and whole wheat flour.)
½ c. sugar
2 T. baking pwd.
1 t. salt
4 eggs, well beaten
2 c. milk
2/3 c. oil
Directions
Mix dry ingredients. Then add the eggs, milk and oil.
Stir only until combined (don’t beat too long or pancakes will be tough).
My sister-in-law's recipe read as follows, and I think they are directions worth repeating:
Fry.
Butter.
Eat.
Burp
Go back to bed.
Note: Fry until bubbles appear on top, then flip.
