Easy, delicious Whole Wheat Pancakes Recipe

Ingredients You'll Need
3/4 cup whole wheat flour
3/4 cup all-purpose flour
2 tablespoons sugar
1 tablespoon baking powder
1/2 teaspoon salt
1 1/4 to 1 1/2 cups milk
1 large egg
4 tablespoons liquid coconut oil
1 1/2 teaspoons vanilla extract
*Optional: add 1 mashed, ripe banana and 1/4 cup of walnuts for banana nut pancakes.
Directions
Make Batter:
Combine all ingredients and mix well, but do not over mix batter. *Note: If the batter is too thick, add 1 or 2 tablespoons more milk to thin it out a little.
Cook Pancakes:
Heat a nonstick electric griddle to 400 degrees. Pour 1/4 cup of the batter onto the griddle and gently spread into a circle.
When bubbles start to appear and pop on the top surfaces of the pancakes, turn over, about 2 minutes.
Once flipped, cook 1 to 2 minutes or until lightly browned and cooked in the middle.
Serve warm with syrup, bananas, or other toppings.
Pancakes will appear more brown if you have added mashed banana. You can control this by reducing the temperature of the griddle by 20 degrees or so.
