Wilted Lettuce (or Spinach or Kale...)

Great as a stand alone wilted lettuce salad, or great as a foundation for adding optional toppings like nuts, cranberries, grilled onions, boiled eggs, chicken, swap out vinegar for a red wine vinaigrette, etc., or swap the lettuce for spinach or mixed power greens.
Healthier option: heat canola or olive oil in a pan, cooking onions, garlic, etc, add in the vinegar/sugar and a small portion (or none) of the bacon drippings, and pour over greens to wilt.
Ingredients You'll Need
4 slices bacon
2-3 Tbs vinegar
1/2 C sugar
1/2 tsp salt
leaf lettuce (or your other favorite greens)
Directions
Fry bacon until crisp, remove and set aside
Prepare greens, cutting into bite-sized pieces in a big bowl. Sprinkle with sugar and salt, top with bacon, stir well
After removing bacon pan from heat, add vinegar into grease, stir and pour over mixed greens. Mix together gently and serve
