"A simple yellow cake."

Serves makes 3 9" layers, or 9"x13" pan, or 2 dz. cupcakes | Prep Time 15-20 minutes | Cook Time 25-35 minute bake time for layers; 35-45 minute bake time for a 9"x13 pan, 15-18 minutes for cupcakes

Why I Love This Recipe

Yellow cake makes an excellent vanilla, almond, or lemon flavored cake. It is also a cake to have in your arsenal as a foundation cake for numerous other recipes.


Ingredients You'll Need

GGFG Yellow Cake mix
Or
1 c. white rice flour
3/4 c. sweet rice flour
1/4 c. + 2 T. tapioca flour
2 T. cornstarch
2 t. zanthum gum
1 stick butter, softened
2 T. oil
1 1/2 c. sugar
3 eggs
1 T. vanilla
1 T. baking powder
1 t. baking soda
1 t. salt
1 T. lemon juice or white vinegar
1 1/4 c. milk


Directions

Mix lemon or vinegar with milk and set aside. Place softened butter and oil into stand mixer and start creaming, after 1 or 2 minutes, turn off mixer, add cake mix or all other dry ingredients , milk, vanilla, and eggs. Stir by hand until moistened, then beat on medium high for a minute. Pour batter into 2 9” cake pans well greased on sides and bottoms lined with parchment paper; a 9"x13" pan lined with parchment paper; or into 24 cupcakes lined with papers. Put into oven preheated to 350F bake 20-25 minutes for cake and 15-20 minutes for cupcakes. Cool before frosting.
