Yellow Squash Casserole

Ingredients You'll Need
3 pounds yellow squash, sliced
1 large onion, finely chopped
2 tablespoons margarine
1 egg, beaten
1 cup sharp cheddar cheese
1/4 cup Parmesan cheese
salt and pepper
1/2 cup cracker crumbs (Ritz)
Directions
Cook squash in salted water until barely tender (about 7 minutes). Drain and mash. Saute onion in 1 tablespoon margarine and add to mashed squash. Add beaten egg and half the cheese to squash mixture. Season with salt and pepper. Pour into a 3-quart dish. Dot with other tablespoon margarine and sprinkle with cracker crumbs and remaining cheese. Bake at 350 degrees for 30 minutes or until brown.
