Yogurt Cake

Why I Love This Recipe
This is one of my most requested cakes, even though it starts with a mix. It gives you a nice, fluffy, versatile cake thats so moist it almost melts in your mouth. Its fantastic with whipped cream, vanilla buttercream, or with a just a fruit compote. It can be used with ANY flavor of yogurt, meaning you can make it a strawberry mango cake (delicious!!), or alternately make it with sour cream and add a little almond extract and make it a sour cream almond cake (to die for!). For now I'll start with the basic vanilla.
Ingredients You'll Need
1 white or french vanilla cake mix
1/3c oil
1/3c water
3 egg whites (egg yolks will discolor cake)
2 6oz cartons of vanilla yogurt
Directions
Mix, and bake at 350 for 22-30 minutes. Cool on wire rack for 10 mins, and then remove from pan. Allow cakes to cool completely on wire rack before frosting.
