Yucatan-style Chicken Soup (sandra's Version)

Why I Love This Recipe

took this recipe and modified it, due to ingredients that i did not have. here is my version.


Ingredients You'll Need

1 cup rice
3 tablespoon cumin
1 1/2 tablespoons olive oil
4 small red onions, thinly sliced
6 garlic cloves, thinly sliced
1 large pablano pepper, chopped
3/4 pound skinless boneless chicken breasts, cut into strips
1 liter veggie broth
1/4 cup lime juice
1 medium lemon, cut in half
3 small green tomatoes chopped
1 handful chopped fresh cilantro


Directions

Rinse chicken thoroughly add powdered cumin, set aside.


Heat oil in large saucepan over medium heat. Add onion, garlic, green tomatoes and pepper. Sauté until onion begins to brown, about 4 minutes. Add chicken; sauté 1 minute. Add broth, lime juice, 1/2 cilantro and rice. Squeeze lemon and add the entire lemon. Simmer until chicken is cooked through and rice is tender, about 20 minutes. Serve in bowls, garnish with rest of cilantro
