Yummy Apple Raisin Loaf

Why I Love This Recipe

Impress the Yia Yias with this Lenten quickbread at your next church gathering. Kid tested, Father approved.

Ingredients You'll Need

1/2 C. apple juice or cider
1/2 C. raisins
1 C. brown sugar
1 T. melted coconut oil
1/2 Tsp. nutmeg
1/2 Tsp. cinnamon
1 C. applesauce, chunky or smooth
1/2 C. chopped nuts of choice (I prefer walnuts)
2 1/2 C. flour
1 Tsp. baking soda
1 T. baking powder
1 Tsp. salt

Optional-approx. 2 T. of Sugar In The Raw natural cane turbinado sugar


Preheat oven to 450 and coat loaf pan with non stick cooking spray

Combine apple juice, applesauce, nuts, raisins, sugar and coconut oil in a large bowl.

Whisk all dry ingredients until combined in a separate bowl, then add to the wet ingredients.

Stir until just combined and pour into your prepared loaf pan.

Sprinkle the top with turbinado sugar crystals for crunch if you are feeling fancy.

Pop into oven and immediately turn down to 350.

Bake for 45 min to 1 hour. Test for doneness by inserting toothpick in center of loaf. If it comes out clean, "is done"!

Let cool and eat up! Impress Yia Yia with your culinary skills!
