Why I Love This Recipe

Try making it with pink lemonade instead, for a refreshing treat for Bridal showers or a Spring tea party.


Ingredients You'll Need

1 stick margarine or butter, melted
1 (12oz) pkg of vanilla wafers-crushed
1 lb. powdered sugar
1 (6oz) can frozen orange juice**, thawed
1/2 cup of finely minced orange peel (candied or fresh) - optional
1 cup finely grated coconut
1 cup pecans (or walnuts), finely chopped


Directions

In a large bowl, mix the crushed vanilla wafers, powdered sugar, nuts and orage peel. Next add the melted butter or margarine and mix it gently. Next Fold in the thawed orange juice making sure all the ingrediants are nicely mixed. Roll the mixture into small balls, and then roll the balls into the finely grated coconut.


Cover the balls with plastic wrap and place the balls in refrigerator or freezer overnight. They will be ready to enjoy the next day. Our family eats them pretty quick, so make sure you hide some for yourself.
