Why I Love This Recipe

Lemon chicken soup with rice, known as 'avgolemono' in Greek cuisine, is traditionally believed to have medicinal qualities, particularly for fighting colds due to its rich chicken broth and citrusy hit of vitamin C. This adjusted version keeps the same Greek inspiration while being CKD and diabetic friendly.


Ingredients You'll Need

1 tablespoon olive oil
1 medium onion, diced
3 cloves garlic, minced
1/2 cup carrots, sliced
1/2 cup celery, sliced
6 cups low-sodium or sodium-free chicken broth
3/4 cup cooked skinless chicken breast, shredded
1/2 cup riced cauliflower
2 large eggs
3 lemons, juiced and zest of 1 lemon
Black pepper, to taste
1/4 cup fresh dill, chopped
1/4 cup fresh parsley, chopped


Directions

In a large pot, heat olive oil over medium heat. Add diced onion and sauté until translucent, about 5 minutes.


Add minced garlic, sliced carrots, and celery. Continue to sauté for another 3-4 minutes until the vegetables begin to soften.


Pour in the low-sodium chicken broth and bring the mixture to a boil. Once boiling, add the shredded chicken and riced cauliflower. Reduce the heat to low and let simmer uncovered, stirring occasionally, until the cauliflower is tender, about 8-10 minutes.


In a medium bowl, whisk together the eggs, lemon juice, and lemon zest.


Slowly ladle a small amount of hot broth into the egg mixture, whisking constantly to temper the eggs.


Gradually add the egg mixture back into the soup pot, stirring continuously until it thickens slightly. Be careful not to let the soup boil at this stage to avoid curdling the eggs.


Season with black pepper to taste, and stir in fresh dill and parsley just before serving.


Ladle into bowls and serve hot, garnished with more herbs if desired.

This soup pairs well with a light salad or steamed vegetables for a refreshing meal. For a non-alcoholic option, herbal tea with lemon complements the citrus notes beautifully.
