Zesty Penne Pasta w/ Peppers
Why I Love This Recipe
A former friend/co-worker turned me onto this recipe about 5 years ago.
Everyone who has tried this recipe just loves it.
Easy dish cooks all in 1 pot. Not alot of dishes for clean-up.
Ingredients You'll Need
1-lb pkg. ground hot sausage (or sweet sausage if you prefer)
14 oz. jar banana peppers, drained and diced
7-oz. jar roasted red peppers, drained and diced
1-16oz. pkg. Penne pasta, uncooked
3-1/2 cups hot water
8-oz. container whipping cream
3/4 cup grated parmesan cheese (or shredded if you prefer)
In a large skillet over medium heat, cook sausage until browned, drain.
Chop sausage as desired and return to skillet. Remove half of banana peppers from jar; drain and dice (reserve remaining peppers for a later use).
Add banana peppers and roasted red peppers, uncooked pasta and the hot water to the skillet; stir. Bring to a boil over medium-high heat.
Cover and cook for about 15 minutes or until pasta is tender and most of the water has been absorbed. Pour cream and cheese over pasta mixture. Mix well and serve.
