1 small green cabbage, thinly shredded

1 small mango, diced
1/2 cup fresh pineapple, diced
1/4 cup red onion, finely sliced

1/3 cup mayonnaise
1 tablespoon apple cider vinegar
1 teaspoon honey or maple syrup
1/2 teaspoon ground ginger

Directions
In a large mixing bowl, combine the shredded green cabbage, grated carrots, diced mango, diced pineapple, and sliced red onion. Mix until evenly combined.
In a separate small bowl, whisk together the mayonnaise, apple cider vinegar, honey, ground ginger, salt, and pepper to create the dressing.
Pour the dressing over the vegetables in the large bowl and gently toss until everything is well-coated with the dressing.
If desired, sprinkle chopped fresh cilantro on top for garnishing.
Cover the bowl and refrigerate the coleslaw for at least 1 hour to allow the flavors to meld.
