Why I Love This Recipe

Zucchinis, also known as courgettes, belong to the cucumber and melon family. They were first cultivated in the Americas and later brought to Europe by Christopher Columbus.

Ingredients You'll Need

8 oz gluten-free pasta
2 zucchinis, spiralized
1 tablespoon olive oil
3 cloves garlic, minced
1/4 teaspoon red pepper flakes
1/4 cup grated Parmesan cheese
Salt and pepper to taste
Fresh basil leaves for garnish


Cook the gluten-free pasta according to package instructions. Drain and set aside.

In a large skillet, heat olive oil over medium heat. Add minced garlic and red pepper flakes, and sauté for 1-2 minutes until fragrant.

Add the spiralized zucchinis to the skillet and sauté for 2-3 minutes until tender but still slightly crisp.

Toss in the cooked gluten-free pasta and grated Parmesan cheese. Stir well to combine and heat through.

Season with salt and pepper to taste.

Garnish with fresh basil leaves before serving.
