Why I Love This Recipe

This is a macaroni that is great for chilly evenings when you want something hearty and cheesy. There is hot sauce (as much as you like - and we like a fair amount) which makes it a little zingy and tasty. A version of this recipe appeared in the Washington Post, which is what this one is a bit modified from.


Ingredients You'll Need

2 c macaroni
2 eggs
4 tbs butter
12 oz evaporated milk
.5 c cream or half-and-half
4 tbs hot sauce (to taste)
3 c shredded sharp cheddar cheese
1 tbs paprika


Directions

Preheat oven to 375 F.


Get a 9-inch square pan or 2-quart casserole dish. spray with nonstick spray.


Boil the pasta in a pot on the stove until cooked (about 8 minutes). Drain the pasta, then rinse with cold water. Drain again, and then put it in the prepared baking vessel.


Lightly beat the eggs in a large bowl, and then mix in the butter, milk, cream, and hot sauce. Add 2 cups of the cheese to the mixture.


Pour the mixture into the baking dish and stir it into the pasta.


Top with the remaining cheese and sprinkle with paprika.


Bake about 30 minutes, or until the top is melty and lightly browned.
