Why I Love This Recipe
I had extra zucchini and threw this together!
Ingredients You'll Need
1 cup flour
1 teaspoon baking powder
1/2 cup vegetable oil
1/2 cup dried minced onion
1/4 cup dried minced bell pepper
1/4 cup dried minced garlic
2 pounds zucchini, peeled and diced
salt and pepper to taste
dash of cayenne pepper
smoked spanish paprika
Preheat the oven to 350 degrees.
Sift flour and baking powder together into a bowl.
Lightly beat eggs, and mix them into the flour with the oil.
Stir in the onion, bell pepper, garlic and zucchini, and season with salt, pepper and cayenne pepper.
Pour mixture into a well-greased 9x13 inch baking dish, and sprinkle with paprika.
Bake for one hour.
