Why I Love This Recipe

Not everything grows well in WI...but, I want you to know that zucchini thrives!!!! So, many of my aunts have taken to shredding this over abundant green vegetable and adding it to anything and everything. Laugh if you want. But if a Wisconsinite hands you a moist piece of chocolate cake in mid August...I'll bet you 20 to 1 odds it has shredded zucchini in it! I can't make this up! It's true!

Zucchini cake, brownies, banana bread...oh the list goes on and on. But, it's good. And....in some form...good for you. It's still a veggie...even if it is added to chocolate cake. See...I knew you'd like Wisco!!!!

Even the title is deceiving...looks like cake not bake!


Ingredients You'll Need

2 Cups zucchini, sliced 1/4 inch thick
1 1/2 Cups fresh mushrooms, sliced
1/2 Lg onion, sliced
1/2 Cup cheddar cheese, shredded
1/2 tsp dried basil or italian seasoning (either is delish)


Directions

Preheat oven to 350


Grease a small shallow casserole dish


Layer zucchini, mushrooms & onions. Sprinkle with cheese and seasonings.


Cover and bake 20 minutes


Uncover and bake 10 more minutes, or till cooked through.


Pairs Well With

Any meat or serve over rice or noodles.
