Zucchini Bars With Clove Frosting

Why I Love This Recipe

These are my fall favorites - they are very moist and keep well, and pretty simple to make. I have no idea where the recipe came from, as I've been making them for years.


Ingredients You'll Need

2/3 cup packed brown sugar
½ cup butter or margarine, softened
½ tsp vanilla
1 egg
1 cup flour
1 tsp baking soda
½ tsp ground cinnamon
½ tsp ground cloves
1 cup shredded zucchini, drained
½ cup chopped nuts

Spice Frosting
¾ cup powdered sugar
1 T. butter, softened
1/8 tsp. ground cloves
3-4 tsp milk

Mix all ingredients until smooth and spreadable.


Directions

Heat oven to 350º.


Grease bottom and sides of 9 inch square pan


Mix brown sugar, butter vanilla and egg in large bowl.


Stir in flour, baking soda, cinnamon and cloves.


Stir in zucchini and nuts


Spread in pan.


Bake 25-30 minutes until toothpick inserted in center comes out clean.


Cool completely before frosting
