And this bread is from Grandma Kay's Recipe Box. I can hear you now - yuck, zucchini - but trust me this is delicious!

Ingredients You'll Need

3 eggs
1 cup oil
2 cups sugar
2 tsp vanilla
2 cups shredded zucchini
1 can (8.25 oz) crushed pineapple, well-drained
3 cups flour
2 tsp baking soda
1 1/2 tsp cinnamon
1 tsp salt
3/4 tsp nutmeg
1/4 tsp baking powder
1 cup chopped pecans


Beat the eggs, oil, sugar and vanilla together until thick. Stir in remaining ingredients, mix well. Pour into 2 greased 9x5" loaf pans. Bake at 350° for about 1 hour or until toothpick inserted in center comes out clean.
