Zucchini Casserole w/ Sour Cream

Why I Love This Recipe


Ingredients You'll Need

2 lbs. zucchini, sliced (3 medium)
1 Tb. butter
1/4 c. dairy sour cream
1 Tb. grated process cheese
1/2 tsp. salt
1/8 tsp. paprika
1 egg yolk, beaten
1 Tb. chopped chives
1/2 c. cracker crumbs
2 Tb. melted butter


Directions

Cook zucchini in small amount of boiling salted water 'til tender-crisp. Drain and place in greased 1 1/2 qt. casserole.


Meanwhile, melt butter. Stir in sour cream cheese, salt and paprika; cook over low heat. stirring constantly, 'til cheese is melted. Remove from heat and stir in egg yolk and chives. Stir into zucchini.


Toss crumbs with melted butter. Place over zucchini. Bake at 350º 20 min.
