Zucchini Mocktail (Or Cocktail)

FEATURING: Zucchini (or pattypan).
In the height of the zucchini season, we definitely put lots of zucchinis in our meals... and drinks! Here's a refreshing drink that you can make as is or turn into a cocktail! *** FOR A COCKTAIL: add a little bit of vodka (ex: 1 ounce or less) OR a little bit of Quebec gin ex: 1 ounce or less).
Ingredients You'll Need
1 ¼ cup (325 ml) grated zucchini or grated pattypan (measured lightly packed)
¼ cup (60 ml) lime juice (or white cranberry juice, or verjuice or rhubarb juice)
2 tbsp. (10 ml) maple syrup (or honey)
2/3 cup (160 ml) sparkling water
FOR GARNISH
Ice cubes
Fresh mint
Sliced zucchini to garnish
Directions
Place the grated zucchini with the lime juice and maple syrup in a bowl, and mix. Let sit for an hour, then press the mixture through a sieve to obtain about ½ cup (125 ml) of zucchini juice (the grated zucchini pieces that remain in the sieve can be used in a salad, muffins, etc.) Divide the zucchini juice in 2 small cocktail glasses. Add 1 ounce of gin (30ml) and top up with sparkling water: start with 1/3 cup (80ml) per glass, taste and adjust to taste. Add a few ice cubes, then a thin slice of zucchini to decorate as well as fresh mint.
