Zucchini Oatmeal Cookies

Why I Love This Recipe
The zucchini are in season here and this is a great way to use some of them! Good way to sneak extra whole grains into the family too! I use white whole wheat flour in my recipes, I am sure that you could substitute half whole wheat flour for the white flour called for in this recipe. I have only made these once with chocolate chips, we prefer roughly chopped walnuts.
Ingredients You'll Need
1/2 cup butter
3/4 cup white sugar
1 egg
1/2 teaspoon vanilla extract
1 1/2 cups grated zucchini
1 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1 teaspoon ground cinnamon
1 cup quick cooking oats
1 cup granola
2 cups semi-sweet chocolate chips
Directions
Preheat oven to 350 degrees.
In a medium bowl cream the butter and sugar. Stir in the egg and vanilla, mix well, then stir in the zucchini.
Sift together the flour, baking soda and cinnamon, then stir into the zucchini mixture.
Stir in the oats, granola and chocolate chips.
Drop dough from a teaspoon onto an ungreased cookie sheet.
Bake for 10 to 12 minutes.
