Zucchini Pancakes

Summertime gardens yield an over abundance of zucchini. Here's a recipe from TOH Prize Winning Recipes. Try this is place of potato pancakes.
Ingredients You'll Need
1/3 cup biscuit baking mix
1/4 cup grated Parmesan cheese
1/8 tsp. pepper
2 eggs, lightly beaten
2 cups shredded zucchini
2 Tbsp. butter
Directions
Combine the biscuit mix, Parmesan cheese, pepper and eggs just until blended. Don't overmix. Add the zucchini and mix well.
Melt butter in a large skillet. Drop the batter by about 1/3 cupfuls into hot skillet; press lightly to flatten. Fry until golden brown, about 3 minutes per side. Makes 5 pancakes
