Ingredients You'll Need

2 zucchinis (about 1 pound total)
1 tablespoon olive oil
1 small onion, diced
2 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon smoked paprika
1/4 teaspoon cayenne pepper (or to taste)
2 cups vegetable or chicken broth
Salt and black pepper to taste
2 tablespoons plain Greek yogurt or sour cream (optional, for garnish)
2 tablespoons chopped fresh cilantro or parsley (optional, for garnish)


Trim and slice the zucchinis into 1/2-inch rounds.

In a medium saucepan, heat the olive oil over medium heat. Add the onion and sauté for 2-3 minutes until translucent.

Add the garlic and spices (cumin, coriander, smoked paprika, and cayenne pepper) and cook for 1 minute, stirring constantly, until fragrant.

Add the sliced zucchini and vegetable or chicken broth. Season with salt and black pepper to taste.

Bring the soup to a simmer and cook for 10-15 minutes, or until the zucchini is tender.

Using an immersion blender or a regular blender (working in batches if needed), purée the soup until smooth and creamy.

Taste and adjust seasoning as needed.

Serve hot, garnished with a dollop of Greek yogurt or sour cream and a sprinkle of fresh cilantro or parsley, if desired
