Zucchini Tomato Casserole

Why I Love This Recipe

This is such a tasty side dish. I love it with almost any main meat dish. If you love zucchini, you have to try this recipe!

Ingredients You'll Need

Casserole ingredients:
3 med zucchini, sliced
4 roma tomatoes, sliced
1 cup grated cheddar
1/3 cup grated parmesan (not the kind out of the shaker)
1 tsp fresh oregano or 1/2 tsp dried
1 tsp fresh basil or 1/2 tsp dried
1 clove garlic, minced or pressed
1/2 tsp salt
1/4 tsp pepper

Topping ingredients:
1 small onion, chopped
1/2 cup bread crumbs
1/4 cup butter, melted


Prepare zucchini and tomato by slicing into 1/4" pieces.
Set aside in separate bowls.

Combine cheddar and parmesan with herbs, garlic, salt & pepper. Set aside.

Butter an 8" square pan.

Alternate zucchini, tomato, and cheese mixture in pan, starting with zucchini and ending with cheese mixture for top layer.

Mix together onion, bread crumbs, and melted butter in a bowl. Spread evenly over top of casserole.

Bake in preheated 375 degree F oven for 30 minutes loosely covered with foil. Uncover casserole and continue to bake for another 20-25 minutes until golden on top.

Remove from oven and cool for 10 min.
Serve warm and enjoy!

Pairs Well With

Chicken or Pork Chops, anything really.
