"From Grandma Butts"

Serves 6 | Prep Time 1/2 hour | Cook Time 1 hour

Why I Love This Recipe

Its reminiscent of old world cuisine of the poor. My favorite recipe from my grandmother.


Ingredients You'll Need

4 zuccinii
1 can crushed tomatoes
1 can tomato sauce
1 dozen eggs, large or medium
1 can peas
3 potatoes cubed
6 cloves garlic, sliced
1 onion, diced
ditalini pasta
1 tbs sugar
basii; as desired


Directions

stripe peel zuccini, slice zuccini thick.


saute garlic and onion


Add sauce and crushed tomato. Add 1/2 can of water and bring to simmer. Add 1 tbs sugar and basil


Add potatoes and bring to simmer until almost cooked


Add zuccini and peas with the water from the can, return to simmer


when simmering, add eggs around rim of pot by breaking and gently dropping into sauce.


When eggs are poached, serve over ditalini with grating cheese
