apple mint triangles

Ingredients You'll Need
1 x 425g can apple pie fruit
1 tbs caster sugar
2 tsp finely chopped fresh mint
2 sheets (25 x 25cm) puff pastry, just thawed
1 egg, lightly whisked
2 tsp demerara sugar
Directions
Preheat oven to 220 degrees C. Line 2 baking trays with non-stick baking paper. Combine the apple, caster sugar and mint in a small bowl. Place the pastry on a clean work surface and cut each sheet diagonally into 4 triangles.
Divide the apple mixture among the centres of pastry triangles. Lighlty brush edges of pastry with a little water. Fold each pastry triangle in half to enclose filling. Use a fork or your fingertips to pinch the edges together to seal. Place the triangles on the prepared trays
Lightly brush each triangle with egg and sprinkle with demerara sugar. Bake in preheated oven for 15 - 18 minutes of until golden and puffed. Remove from oven. Serve triangles with warm custard, optional.
