Why I Love This Recipe

this recipe is one of my favorite,works the best with chicken and angel hair or chicken roulade


Ingredients You'll Need

1/2 bottle good dry white wine(pinot grigio or sauvignon blanc)
2 cups heavy whipping cream(scalded)
2 sticks butter (room temp cut into 16 pats)
2 1/2 cups parmigiano reggiano cheese(microplaned)
4 cloves garlic,sliced
2 shallots,sliced
1/4 tsp white pepper
1 tsp lemon zest


Directions

saute shallots and garlic in a sauce pan until slightly browned,deglaze pan with wine and reduce until about 1/4 cup liquid is left,strain shallots and garlic reserve liquid and return to pan add butter to reduction pat by pat until all butter is combined,slowly add scalded cream, whisk into butter,simmer about 8 min then add cheese,whisk cheese into cream and cook until it thickens add lemon zest at the end.it wil also thicken when cooled.I also like to add marinated artichoke hearts rinsed of the brine and chopped into sauce!
