sooo good! you can easily use a rotisserie chicken
Ingredients You'll Need
1/4 tsp garlic powder
1 large onion, diced
2 tomatoes, diced
1 tsp ground cumin (my favorite spice so you can add more)
2 cups cooked chicken, diced
1 4 oz can chopped green chilis
1 tsp salt
8-10 flour tortillas
1 1/2 cups shredded cheese
vegetable oil for frying
Combine garlic, onion, tomato and cumin. Heat 1 tbsp oil in a frying pan, add tomato mixture and bring to a simmer over mediums heat, uncovered.
Lower heat and cook until onions are soft, straining off any liquid. Add chicken, chilies and salt. set aside an let cool slightly.
Place 2 heaping tbsp. of chicken mixture and a handful of cheese in the center of a tortilla. Fold and roll the tortillas to resemble a burrito (fold in ends and roll - secure with a toothpick)
heat vegetable oil in a skillet to 475. Place chimichangas, flap side down in skillet and fry until golden brown. flip and frothier side. Drain and keep warm in the oven until all are done.
Serve with salsa, sour cream, guacamole, margarita, queso - really add what you want and enjoy!
