Why I Love This Recipe
I dont know why the site is calling me a guest, but here goes another recipe
I invented this one night by just dumping stuff into an electric skillet. I use boneless, skinless chicken and tend to like thighs for this, but use what you like, its all good.
Ingredients You'll Need
2 medium onions, sliced
1 shallot, diced
3 to 5 garlic cloves, crushed
3 tbsp olive oil
Brown above in the electric skillet of deep dish frying pan
add: (adjust to your taste)
1 tsp cumin
1 tsp coriander
1/2 tsp ginger paste or 1" fresh ginger cut up, put thru a spice grinder with a bit of water
1 tsp curry powder (i use jamaican)
3 tbsp chili powder
salt
pepper
Directions
stir that into the onion mixture and sizzle for a few seconds, then add the chicken pieces and then dust them with ground CLOVES.. yes, clove, and a bit of your favoirte red pepper powder
Now add a
16 oz can of tomatoes
1 can of lentils (i am cooking for 4 here)
1 small can tomato sauce
simmer for like 30 minutes or until done. Meat should be tender and falling apart.
10 minutes before serving mix-in
Pinch or two of Garam Masala (find it in East/West Indian stores)
this is great over noodles or rice, i like to chop fresh coriander on top of it, but my husband thinks that tastes like soap
