christmas mincemeat sponge cake

Why I Love This Recipe
a christmassy twist on an old favourite mmmmmmmmm!
Ingredients You'll Need
8oz self raising flour
8oz butter
8oz caster sugar
1tsp vanilla extract
4 eggs
1 pack butter (250g)
1 box icing sugar (500g)
1tsp vanilla extract
1/2 jar homemade mincemeat
Directions
1- beat butter until light and fluffy
2- add sugar, flour, eggs and vanilla extract then beat well
3- divide mixture between two lined sandwich tins and bake for about 25 minutes at 190c or until a toothpick comes out clean
4- cool completely on a wire rack whilst making the frosting
frosting-:
1- beat butter and gradually add sifted icing sugar until fluffy and pale
2- add vanilla and any colouring if desired at this stage and beat again
assembly-:
1- trim the cakes, place the bottom cake on a serving plate and cover with the mincemeat
2- place top cake on top
3- cover with the frosting and decorate as desired
