Why I Love This Recipe
This is a mexican style chicken that is pretty basic, but I think has a pretty good sauce that is really good over rice or with tortillas
Ingredients You'll Need
4 skinless boneless chicken breasts cut into bite size pieces
2t chili powder
1t cumin
1t salt
1t black pepper
1T canola oil
2T roasted garlic
1 medium onon, diced
1 4 oz can Ortega mild chiles, diced and drained
3/4 c chicken broth
2 T flour
2T water
1 cup sour cream
Directions
combine chile powder, salt and pepper in small bowl
rub chicken pieces with spice mixture
add oil to frying pan and brown chicken
remove chicken and put in 9x12 baking dish
caramelize onion in frying pan, add garlic
add chiles and broth and bring to a boil
Blend flour and water together in a small bowl to create slurry, and add to broth mixture
Let cook until sauce thickens and flour is cooked
Add sour cream to sauce
Pour sauce over chicken and bake at 350 degrees for 45 minutes to 60 minutes
