1 and 3/4 cup (220g) all-purpose flour

1/2 teaspoon baking soda

1/4 teaspoon salt


Directions

Preheat Oven: Set your oven to 350°F (180°C). Line two baking trays with parchment paper.

Mix Dry Ingredients: Whisk together flour, baking soda, and salt. Set aside.

Cream Butter and Sugar: Beat the butter and sugar until well combined.

Add Egg and Lemon: Mix in the egg, lemon zest, lemon juice, and lemon extract until fully incorporated.

Combine Dry Ingredients: Mix in the dry ingredients until just combined.

Form Cookies: Roll the dough into balls, about 1.5 tablespoons each. Place them on the prepared baking trays, leaving space between each cookie.

Bake: Bake for about 12 minutes or until the edges are lightly golden.

Cool: Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
