"Make Ahead Mason jar Lunch"

Serves 1 | Prep Time 5 min | Cook Time 20 in

Why I Love This Recipe

Fun, portable, make ahead salad

Ingredients You'll Need

50 g brussels sprouts
50 g chick peas
50 g broccoli
50 g sweet potatoes

1 T. Olive oil
1 T lemon juice
2 T Hummus
1 t thyme
1/2 t water
salt and pepper to taste


mix dressing: hummus, lemon juice olive oil thyme salt pepper and water together.

Layer dressing on bottom of jar. top with brussel sprouts, sweet potatoes, tofu, broccoli and chick peas. Refrigerate

When ready to eat, pour into a bowl. Mix up and enjoy! Putting the dressing on the bottom of the salad keeps the salad from getting soggy. Can keep up to 5 days in the refrigerator

one jar= 330 cal: 12.7 protein, 25.5 fat, 19.7 fat

Pairs Well With

Adding grilled chicken is an excellent way to pump the protein in this delicious salad if your not limited to a vegan diet. Otherwise, its balanced on its own. If you are limiting fat, try reducing the dressing to 1/2 the size.
