Ingredients You'll Need

1/2 tsp. instant yeast
OR
50 grams (1/4 cup) sourdough starter, fed (see recipe)
1 tsp. granulated sugar
1 tsp. honey
225 grams (1 cup) lukewarm water
15 grams (1 Tbsp.) EVOO
75 grams (2 1/2 cups) flour (all purpose is fine, bread will give a chewier crust)
1 tsp. kosher salt


Directions

Put yeast OR sourdough starter in the bottom of stand mixer bowl. Top with sugar, honey, water, and olive oil and stir a bit to dissolve yeast/ sourdough


Top with flour and salt.


Mix on low speed for about 10 minutes, until dough is elastic and only slightly sticky.


Turn out onto a lightly floured work surface and divide into 2 or 4 pieces.


Slightly flatten each piece, fold the edges to the center, and roll into a ball


Let sit in the refrigerator for up to 3 days, or let proof on the counter until doubled in size, about 2-3 hours
