Why I Love This Recipe

This recipe was born from an excess of tomatoes and squash in our garden. We were tired of plain old steamed squash so I came up with this and it has become one of my husbands all time favorites!


Ingredients You'll Need

olive oil
1/3 cup chopped onion
1/3 cup chopped green pepper
2 or 3 med. summer squash, sliced
2 or 3 med. zucchini squash, sliced
1 or 2 med. fresh tomatoes or one 14 1/2 oz. canned tomatoes
1 8oz can tomato sauce
onion powder
garlic powder
celery salt
Italian Seasoning
salt and pepper
1/2 to 1 lb pasta


Directions

cook pasta according to package


Saute onion and green pepper in olive oil in large skillet or dutch oven


saute sliced squash till just tender about 10 min.


add tomato sauce, sliced (or canned) tomatoes and seasoning to taste


simmer about 5 min. till heated through


serve over hot cooked pasta
