Why I Love This Recipe
Ingredients You'll Need
1 cup plus 4 TBSP water
1 cup unbleached white flour (you can use ww if you want but it gets kind of heavy)
2 cups whole wheat flour
½ cup ground flaxseeds (or additional flour, your choice of kind)
1 ¾ teaspoon salt
2 teaspoons dry yeast
Directions
Using a bread machine with a 1 and ½ pound capacity, put the ingredients into the bread pan following the instructions specific for your machine. If you bread machine does not have a “dough setting” remove the dough after the first rising.
When the machine signals the dough cycle is complete, remove the dough from the machine and punch down. Shape into 2 baguettes.
Place the baguettes on a baking sheet (I use stoneware). Allow the dough to rise until double in size. Place in preheated oven at 450degrees F. Quickly spitz the oven with water from a plant mister. Spritz every 5 minutes for 15 minutes. Lower the oven to 425 degrees F, spritz and bake for 10 minutes. Turn off oven, spritz and leave the bread in the oven an additional 10 minutes. Ovens vary. If your baguettes appear to brown to quickly, lower the temp about 25 degrees from what is listed. When crisp and golden brown, remove from oven and allow to cool on a wire rack. Delicious!!
