yummy cinnamon candied pecans

Why I Love This Recipe
I have always loved candied pecans on salads, but never thought I would be able to make them myself, as I had heard they were really hard to make. As I started playing with this recipe, I have found that they are actually pretty easy to make, and are great as a snack or over a salad.
Ingredients You'll Need
3 cups pecans
1 cup granulated sugar
1 T cinnamon
1 egg white, beaten until very frothy
Directions
Beat egg white until very frothy, almost to soft peaks.
Add Pecans to egg whites, making sure they are covered completely.
Mix sugar and cinnamon together, then pour over pecans and stir thoroughly to make sure all pieces are covered.
Pour pecans onto parchment covered cookie sheet in 325 degree oven
Toss pecans every 15 minutes in oven - cooking for about 30 - 45 minutes.
I just keep an eye on them to watch sugar mixture get golden brown and puffy
Remove from oven and let cool.
After completely cooled, break up pieces and store in air tight container - They can last in a cool dry environment for up to 6 months
