~^Angel's^~ Crowder Peas (from canned)
INGREDIENTS
- Cooking Time: 14-16
- Servings: 7
- Preparation Time: 5
- 2 cans Crowder Peas (I usually find Bushes brand), UNdrained + (appx) 1/2 can water to cover
- 2 tsp Dry Chopped Onion Flakes
- 1/2 tsp Garlic Powder
- 1/2 tsp Seasoned Salt
- 1/2 tsp Salt
- 1/4 tsp Black Pepper
- 1/2 Tbsp Red Wine Vinegar
- *Mild Banana Pepper Rings- for serving suggestion
- *Jalapeno Slices- for serving suggestion
DIRECTIONS
- 1) In a medium sauce pan, over medium-high heat, combine all ingredients and enough water to cover the peas. Bring to a boil.
- 2) Turn down heat and allow to simmer 7-10 minutes.
- (A longer simmer will help soak in the flavors. If you are using frozen peas, be sure to simmer longer, until your peas are firm- not "crunchy", but not to overcook them to "mushy".)
- Serve with some Mild Banana Pepper Rings and/or a splash of their juice! Or for a little heat- a few Jalapeno Slices! Yum!
RECIPE BACKSTORY
I was never a fan of sweet peas, the hulls that came with black-eyed peas, or pinto beans much as a kid. However, every year Mom and Dad would make a garden, and the Crowder Peas were the only thing in a pod I didn't mind hulling. To me, their flavor is a cross between the black-eyed pea and pinto bean, but with the shape similar to a garbanzo bean. Now, I don't plant my own garden, but can occasionally still find either a frozen version or a canned version of these delicious legumes!
