~^Angel's^~ Perfectly Baked Potatoes!
INGREDIENTS
- Potatoes for baking (Russet or Idaho will do), scrubbed clean, with any eyes "dipped" out
- Olive Oil of choice
- seasoned salt
- black pepper
- garlic salt (or a substitution of salt and garlic powder)
DIRECTIONS
- 1) Preheat **oven to 350°F.
- 2) Using a fork, poke holes into each potato from end to end, as deep as you can push the prongs in.
- 3) Pour a small amount of oil into the palm of your hands, and rub it well onto each prepared potato.
- 4) Lay onto a clean plate, and sprinkle each side of the potato equally with seasonings. Be careful not to over salt the skin.
- 5) Place on pizza pan to cook in conventional oven. Then, bake 30 minutes on one side. Flip, and bake for another 30 minutes. ***Bake time will depend on the size of the potato so additional baking may be needed.

Learned how to make these "perfectly" while I worked back-of-the-house at the Cracker Barrel- my first job with some of the best people!
** You can also use a Toaster Oven, which I usually just place aluminum foil over the wire rack, instead of cooking on a pizza pan.
*** I use metal grilling tongs to flip each potato and use the "squishing method" to see if I need to cook the potatoes longer. Basically, if the potato is still firm they should stay in the oven longer. Or, if you cut a slit into the potatoes, the knife should cut through like butter!
