ALMOND WILD RICE

INGREDIENTS
  • Cooking Time: 20
  • 4 ounces pure wild rice
  • 1/2 cup sliced almonds
  • 2 tablespoons chopped fresh oregano leaves
  • juice and grated zest of ½ orange
DIRECTIONS
  1. Place rice in pan of cold, salted water, and bring to a boil.
  2. Cook for 10 minutes.
  3. Turn off heat, cover and allow to steam for 20 minutes (rice will swell and curl).
  4. Return to a simmer and cook for 10 minutes or until tender.
  5. Keep warm.
  6. Just before serving, toss through the almonds, oregano, orange juice and zest.
