10 Cup Cookies

INGREDIENTS
- 1 cup sugar
- 1 cup firmly packed brown sugar
- 1 cup shortening
- 1 cup peanut butter
- 3 eggs
- 1 cup flour
- 1 cup uncooked quick-cooking oats
- 2 t. baking soda
- 1 t. baking powder
- 1 cup chopped peanuts
- 1 cup flaked coconut
- 1 cup toffee bits
- 1 cup white chocolate chips
DIRECTIONS
- Preheat oven to 350 degrees.
- Combine sugar, brown sugar, shortening and peanut butter in large mixing bowl. Beat at medium speed with an electric mixer until creamy. Add eggs, beating well.
- Add flour, oats, baking soda and baking powder. Mix well. Stir in peanuts, coconut, toffee bits and white chocolate chips.
- Scoop about 2 tablespoons of dough per cookie and place on parchment lined baking sheets.
- Bake for 10-12 minutes. Cool on pan for 5 minutes before moving to cooling rack.
