10 minute Veggie Omelet

  • Coconut oil spray
  • 1/4 cup chopped tomatoes
  • 1 cup fresh spinach leaves
  • 1 cup chopped broccoli
  • 4 large egg whites, beaten
  • 2 tablespoons crumbled queso fresco
  • 1/4 teaspoon cayenne pepper
  • 2 slices Whole Grain bread, toasted.
DIRECTIONS
  1. 1. Heat a nonstick skillet on medium heat. Coat pan with coconut oil cooking spray. Add veggies and cayenne
  2. pepper, and sauté 4 minutes.
  3. 2. Pour in eggs over veggies in pan and sprinkle goat cheese. Cook 3 to 4 minutes; flip omelet and cook 2
  4. minutes. Serve with toast.
