14 Karat Cake

INGREDIENTS
  • 2 C flour
  • 2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1 tsp salt
  • 2 tsp cinnamon
  • 2 C sugar
  • 1/2 C salad oil
  • 4 eggs
  • 2 C finely grated carrots
  • 1 (8 1/2 ounce) can crushed pineapple (drained)
  • 1 C. raisins
  • 1 C. chopped walnuts
DIRECTIONS
  1. Mix first ingredients well.
  2. Add the pineapple, raisins and nuts.
  3. Pour into greased 9 x 13 inch baking pan.
  4. Bake at 350 F for app 45 minutes.
  5. Frost with cream cheese frosting.
RECIPE BACKSTORY
This is one of our favorites also. I sometimes use pecan instead of walnuts and you can add chopped nuts sprinkled over the top of the frosting.
