18 Minute Chicken
INGREDIENTS
  • Servings: 4
  • 4 boneless/skinless chicken breast halves
  • 1 med. onion, sliced
  • 2 med. zucchini or yellow squash, sliced
  • 1/2 lb. mushrooms, sliced
  • 3 tbsp. butter
  • 3/4 tsp. dried basil
  • 1 clove garlic
  • 1/8 tsp. paprika
  • Dijon mustard
  • salt
  • pepper
  • 1/2 cup grated Parmesan cheese-reserved
DIRECTIONS
  1. Preheat oven to 450 degrees
  2. On greased aluminum foil place approximately 1/4 of ingredients in order:
  3. Onion
  4. Chicken
  5. Salt and pepper chicken to taste
  6. Brush small amount of Dijon mustard on chicken
  7. Add squash and mushrooms
  8. Top with butter, basil, garlic and paprika
  9. Tightly wrap foil
  10. Place the packets on sheet pan
  11. Bake for approximately 18 minutes (depending on size of chicken breast and your oven)
  12. Remove from oven
  13. Open foil and sprinkle with Parmesan cheese
  14. Serve
RECIPE BACKSTORY
Easiest way to make dinner in a pouch. If the breasts are thinner the 18 minutes should do it. If they are thicker you can pound them out or cook the chicken longer.
