  • 16 oz. elbow macaroni
  • 1 c. finely shredded mild cheddar cheese
  • 1.2 c. finely shredded sharp cheddar cheese
  • 1/2 c. finely shredded Monterey jack cheese
  • 1.2 c. butter
  • 2 c. half and half 1 c. velveeta cubed
  • 2 eggs beaten
  • 1/4 tsp salt
  • 1/8 tsp black pepper
DIRECTIONS
  1. preheat oven to 350
  2. butter deep 2 1/2 qt casserole dish
  3. cook macaroni until firm to bite down on
  4. in small sauce pan melt butter and add macaroni
  5. combine 1 1/2 cup shredded cheese to macaroni
  6. add velveeta half and half and eggs to macaroni
  7. combine thoroughly add salt and pepper
  8. transfer to greased casserole dish
  9. sprinkle with remaining cheese
  10. bake until bubbly
